Vegetarian Mexi Tacos

Now that the weather is warming up, it’s ideal for tacos!  Try our vegetarian taco recipe for a Mexican inspired fiesta. Enjoy!

Vegetarian Mexi Tacos

Serves 2-3



Tortillas or taco shells

1 sweet potato

1 tsp olive oil

Pinch chilli powder or cayenne pepper

2 x 400g black beans cans

1 tsp cumin powder

½ tsp coriander powder

½ tsp chilli flakes (optional)

1 x 300g jar of salsa (we love Byron Bay Chilli Co Salsas! Spicy or mild!)

1 large avocado

¼ red onion

½ cucumber

1 tomato or a handful of cherry tomatoes

1 lime

Handful of fresh coriander


Cracked pepper

Sour cream (optional)

Feta  or vegan cheese (optional)


  1. Preheat oven to 200C and line a tray with baking paper.
  2. Peel and cut sweet potatoes into cubes. Put in a bowl, add olive oil, chilli or cayenne pepper, and season with salt and pepper. Mix through so the sweet potato is coated, drizzle in a little more oil if needed.
  3. Place in a single layer on the baking tray and roast for approximately 30 minutes or until the sweet potato is soft.
  4. Mash avocado in a bowl and squeeze juice from half a lime, add salt and pepper to taste and a handful of chopped coriander.
  5. Diced red onion, cucumber and tomato. Add to avocado and give it a good mix.
  6. Drain and rinse black beans and place in a saucepan on a low heat. Mix in the salsa and spices (cumin, coriander, chilli flakes), and season with salt and pepper to taste.
  7. Heat your tortillas in a pan or pop taco shells in the oven as per packet directions.
  8. Assemble your tortilla or taco with as much bean mix as you like, followed by roasted sweet potato, a dollop of guacamole and an extra squeeze of lime.
  9. Top these with some feta cheese or sour cream, or easily keep vegan by trying some of our vegan dairy alternatives.


  • In a hurry? Skip the sweet potato and stick to black bean tacos.
  • Don’t have black beans? Red kidney beans would work too!
  • For a different texture, roughly mash the beans.
  • Love avocado? Add more!
